Greek Chicken Kabobs with Tzatziki Sauce just in time for the warmer weather.

The warmer weather is here! Yay! I am so excited to be able to enjoy being outside on my patio and enjoying great food, Greek Chicken Kabobs with Tzatziki sauce is a great recipe to impress your friends, family and/or guests when you want to present a tasty dish. I chose to bake mine in the oven as baking them provides even, steady heat ensuring they develop as much flavor and texture as possible. However feel free to place them on a hot grill on the deck or patio as I am sure they will be just delicious.


The chicken breast chunks are marinated for maximum flavor and then placed on skewers along side white onion, red bell pepper, yellow bell pepper and orange bell pepper to create a colorful and appealing kabob. These kabobs are placed in the oven to be baked to perfection in a matter of minutes. Feel free to substitute your favorite veggies as I am sure they will be great.


Served with an incredible Tzatziki sauce that is second to none. The combination of

plain Greek yogurt, cucumber, lime juice, salt, pepper, garlic , ground red pepper and freshly chopped dill creates this sauce that really compliments the kabobs as it is cool, light and refreshing while enjoying the kabobs. It's easy to see why this sauce is loved and known around the world!

Broccoli Corn Casserole: the PERFECT side dish!

Whether you are looking for a side dish or accompaniment to Sunday dinner with family, week night dinner, or Thanksgiving dinner this Broccoli Corn Casserole with delight you and your dinner guests/family for sure. This casserole is made with sweet yellow corn and tender broccoli cuts in a rich cheddar cheese sauce baked to perfection. I prefer sweet yellow corn as it has a slightly sweet tender taste and texture that stands up to any other ingredients you pair it with. 


Butter, heavy cream and cornstarch provide structure and consistency to this casserole and along side tender broccoli cuts creates a very flavorful dish that pairs well with chicken, steak, barbecue ribs or other protein you may choose. Bread crumbs top off this casserole and provide a slight crunch to the dish. Once while making this dish, I discovered I ran out of traditional breads crumbs, however I has some croutons in the pantry so I place the croutons in a small blender and thirty seconds later I had bread crumbs! I placed the casserole in the oven and in a matter of minutes my broccoli corn casserole was ready. 

Feel free to add chopped bacon to this broccoli corn casserole and/or substitute your favorite cheese (cheddar cheese used here) to make it your own creation. I strongly urge you to try this recipe as I am sure that you will love it and who knows, this casserole just might become a holiday or week night tradition in your family or circle of friends.
